<p>Poffertjes kun je natuurlijk eten bij de lokale poffertjestent en &#8211; pre-corona &#8211; op willekeurige rommelmarkten, festivals en braderieën. Maar met dit recept maak je in een mum van tijd poffertjes die beter smaken dan die bij de poffertjeskraam. Het geheime ingrediënt? Karnemelk!</p>



<h2 class="wp-block-heading">Waarom karnemelkpoffertjes?</h2>



<p>Waarom karnemelk in plaats van gewone melk? Omdat karnemelkpoffertjes nog net iets luchtiger en lekkerder zijn dan &#8216;normale&#8217;  poffers. Dat bedachten we trouwens niet zelf, dat deden de Denen al voor ons. Zij eten al generaties lang aebleskiver, oftewel Deense poffertjes. Die zien er wel wat anders uit: groter, ronder en knapperiger. In Noorwegen worden poffertjes trouwens &#8216;Munker&#8217;  genoemd. Sowieso zijn poffertjes (in sommige streken &#8216;broedertjes&#8217; genoemd) niet echt oud-Hollands, al beweren we dat graag. Al in de achttiende eeuw werden ze in een Frans klooster gebakken, toen met roggemeel.</p>



<h2 class="wp-block-heading">Wat is het verschil met pannenkoeken?</h2>



<p>Veel mensen denken dat je met <a href="https://www.eieiei.nl/6x-pannenkoeken/">pannenkoekenbeslag</a> ook poffertjes kunt maken. Maar poffertjesbeslag &#8211; ook poffertjesdeeg genoemd &#8211; is niet hetzelfde. Het belangrijkste verschil? Deze karnemelkpoffertjes maak je met boekweitmeel en het beslag &#8211; oké deeg &#8211; moet rijzen. Dat is dus ook de reden dat er gedroogd gist in dit recept gaat. Er zijn ook heel veel recepten zonder boekweit te vinden op het wereldwijde web, maar geloof ons: die echte poffertjessmaak krijg je alleen als je boekweitmeel gebruikt.</p>

<p><strong>Tip</strong>: sommige mensen voegen stroop toe, om de poffertjes een extra kleurtje te geven. Wij doen dit niet, want extra stroop is natuurlijk ook weer extra suiker. </p>
