<p><strong>Arroz con huevo, oftewel: rijst met ei is een populaire lunch in Latijns-Amerika. Het is een simpel gerecht dat bestaat uit, jawel, rijst met een gebakken ei er bovenop.</strong></p>

<p>Arroz con huevo is een makkelijk ontbijt- of lunchgerecht met maar een paar ingrediënten en werd vroeger met name door de allerarmsten gegeten. Vandaag de dag wordt deze makkelijke en vullende lunch door alle lagen van de bevolking gegeten. Vooral in Chili, Colombia, Cuba en sommige regio’s van Spanje staat het vaak op de kaart, maar het wordt ook in de Caraïben gegeten. </p>



<h2 class="wp-block-heading">Verschillende varianten</h2>



<p>Per land &#8211; en soms zelfs per regio &#8211; wordt er wel een verschillende variant van arroz con huevo op tafel gezet. Zo wordt deze lunch in Spanje geserveerd met sofrito, een basissaus waar in ieder geval ui, knoflook en tomaat in zit. In de Caraïben serveren ze het met <a href="https://nl.wikipedia.org/wiki/Bakbanaan" target="_blank" rel="noreferrer noopener">bakbanaan</a>. In vrijwel alle gevallen wordt het gerecht in ieder geval afgemaakt met wat geraspte kaas en een handje fijngehakte, verse peterselie.</p>



<p><strong>Tip</strong>: heb je zin in een warme lunch, bak de rijst dan kort op in de pan waarin de eieren zijn gebakken. </p>



<h2 class="wp-block-heading">Gezondere variant van arroz con huevo</h2>



<p>Hoe lekker en vullend ook, écht gezond is deze Chileense arroz con huevo natuurlijk niet. Niet dat we het gerecht nu direct met junkfood vergelijken, maar wat ons betreft mogen er wel wat groenten bij. Serveer dit gerecht daarom ook eens met plakjes bakbanaan, avocado of gebakken tomaat erbij, dan krijg je extra vitaminen, gezonde vetten en vezels binnen. De witte rijst kun je eventueel vervangen door zilvervliesrijst. Wij zouden dan wel de portiegrootte iets naar beneden bijstellen. Sowieso is het als ontbijt van lunch best een portie van formaat. Voor een minder grote (en slankere) portie kun je 125 gram gekookte witte rijst per persoon aanhouden.</p>
