<p><strong>Spaanse knoflooksoep, oftewel sopa de ajo, staat in vrijwel ieder Spaans eetcafé op de kaart. En het is zo lekker, dat je het tenminste één keer in je leven gegeten zou moeten hebben. Het liefste in Spanje natuurlijk, maar gaat dat niet, dan is dit recept een goed alternatief.</strong></p>

<p>Spaanse knoflooksoep is eigenlijk van oorsprong armeluisvoedsel. Het is gezond, goedkoop en een ideaal gerecht om restjes oud brood op te maken. Het liefst gebruik je grof gesneden stokbrood, maar eigenlijk zijn alle oude restjes brood bruikbaar.&nbsp; Maar of je nu goed of slecht in je slappe was zit, feit is dat deze Spaanse knoflooksoep gewoon enorm lekker is.</p>

<p>Zoals bij zoveel populaire Spaanse gerechten, bestaan er ook van de Spaanse knoflooksoep &#8211; sopa de ajo &#8211; vele varianten. Er zijn recepten die van generatie op generatie gebruikt worden, maar vaker is de receptuur afhankelijk van de restjes in de koelkast. Chorizo, eieren, bacon, ham… eigenlijk kan alles er in. De soep wordt in bepaalde regio&#8217;s van Spanje ook vaak met Pasen gegeten.</p>



<p>Normaliter word Spaanse knoflooksoep bereid met kippenbouillon. Maar ook de keukens en gerechten waarin vlees of vis niet weg te denken lijken te zijn, komen in dit boek volop aan bod. Boerdam giet klassiekers in een eigentijds vegetarisch jasje met een knipoog naar het origineel.</p>



<p><em>Isabel Boerdam lanceerde in 2013 haar food &amp; lifestyle blog <a href="https://www.dehippevegetarier.nl" target="_blank" rel="noreferrer noopener">De Hippe Vegetariër</a>, dat inmiddels is uitgegroeid tot het grootste Nederlandstalige platform voor vegetariërs. Hier laat Isabel zien dat vegetarisch eten beslist niet saai, smakeloos of ingewikkeld is maar juist verrassend, smaakvol en heel eenvoudig. Ook lanceerde ze in 2018 de <a href="https://www.weekzondervlees.nl" target="_blank" rel="noreferrer noopener">Nationale Week Zonder Vlees</a>, die sindsdien ieder jaar in maart plaatsvindt.</em></p>
