<p><strong>Oeufs en meurette is een Franse klassieker uit de Bourgogne. Heerlijke gepocheerde eieren in een saus van rode wijn, met spek en champignons. </strong></p>

<p>Eigenlijk zijn oeufs en meurette &#8211; zoals wel vaker met ei-gerechten &#8211; bedacht om kliekjes te verwerken. Namelijk de overgebleven saus van die ándere Franse klassieker: boeuf bourguignon. Maar goed, oeufs en meurette gaan ook prima als zelfstandig gerecht. Je kunt het eten als warme lunch of voorgerecht met één gepocheerd ei, of je rekent twee eieren per persoon en maakt er een hoofdgerecht van.  Het ziet er misschien uit als een bordje rode smurrie, maar geloof ons: één hap en je bent verkocht. </p>



<h2 class="wp-block-heading">Oeufs en meurette: bourgondisch genieten</h2>



<p>Goed voor de lijn is dit gerecht zeker niet, maar wel ontzettend romig, vol en lekker; echt Bourgondisch genieten dus. Want het Bourgondische leven is lekker uitgebreid eten en drinken.<strong> </strong> De term verwijst naar de 15e eeuw, waarin het Franse koningshuis en de hertogen van Bourgondië hun macht uitbreidden naar de Lage Landen. Daar toonden ze de Nederlanders dat zij wel wisten wat genieten was. Ze bedachten wijnfonteinen, maar lieten ook pasteien maken waar op het moment suprême muzikanten uit tevoorschijn kwamen. Hierdoor worden België en de Zuid-Nederlandse provincies Noord-Brabant en Limburg nog steeds als ‘Bourgondisch’ beschouwd. Dat snappen wij wel; tenslotte komen uit Limburg ook die heerlijke <a href="https://www.eieiei.nl/asperges-op-zn-limburgs/">klassieke asperges</a>.</p>



<p><strong>Tip</strong>: je kunt de meurettesaus van te voren maken en later weer opwarmen. Dan smaakt hij alleen nog maar lekkerder.</p>

Natuurlijk kun je hierin ook restjes verwerken als het zo uitkomt, maar het basisrecept bevat in ieder geval ham en kaas.</strong></p>

<p>De klassieke Franse omelet, ook wel bekend als &#8216;l&#8217;omelette française&#8217;, is een eenvoudig maar lekker eigerecht met een perfecte balans in smaak en textuur. Meestal is hij heel zacht en romig van binnen, bijna custard-achtig. Een goed vullende lunch, met of zonder boterham.</p>



<h2 class="wp-block-heading">Klassieke Franse omelet of juist jouw unieke variant</h2>



<p>Zoals gezegd is dit een prima gerecht om restjes op te maken. Je kunt experimenteren met verschillende vullingen &#8211; champignons bijvoorbeeld &#8211; en kruiden om je eigen unieke variant te creëren. Houd de pan daarna iets schuin en duw met een spatel het ei naar boven zodat het nog vloeibare ei naar beneden loopt en kan stollen. Houd ook de andere kanten van de pan schuin en herhaal met de spatel tot bijna al het ei gestold is.</span></div></li><li id="wprm-recipe-8977-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Leg de ham en kaas op één helft van het ei en klap de omelet dubbel met een spatel. Verwarm nog even tot de kaas gesmolten is en serveer dan direct.</span></div></li></ul></div></div>
