<p><strong>Zeg je Spanje, dan zeg je tapas. En een van de betere tapas komt uit de stad Murcia: zarangollo Murciano; een heerlijke courgetteschotel met ei en ui.</strong></p>

<p><a href="https://www.masspanje.nl/stedenreizen-murcia" target="_blank" rel="noreferrer noopener">Murcia</a> is de hoofdstad van de gelijknamige regio in het zuidoosten van Spanje. De stad werd gesticht door de Moren en dat zie je nog steeds terug in de architectuur. Murcia ligt circa 30 kilometer van de Costa Calida (‘warme kust’) en staat bekend om z’n talrijke gezellige pleintjes met tapasbars. Een van die tapas is Zarangollo Murciano, een gerecht op basis van roerei met courgette en ui. Soms worden er ook aardappelen in de schotel gedaan, maar die horen er officieel niet in.</p>



<h2 class="wp-block-heading">Zarangollo Murciano met witte wijn</h2>



<p>Zarangollo Murciano wordt over het algemeen geserveerd als tapa, met brood en een glas witte wijn. Maar het is ook vaak een bijgerecht bij een visschotel.  Het wordt in ieder geval gezien als specialiteit van de regio en is zeker de moeite waard om te bestellen als je daar bent. Maar voor wie voorlopig niet naar Spanje gaat zetten we het recept hieronder.  Serveer heet of in ieder geval warm met stokbrood of grof gesneden witbrood.</p>

<p><strong>Spaanse knoflooksoep, oftewel sopa de ajo, staat in vrijwel ieder Spaans eetcafé op de kaart. En het is zo lekker, dat je het tenminste één keer in je leven gegeten zou moeten hebben. Het liefste in Spanje natuurlijk, maar gaat dat niet, dan is dit recept een goed alternatief.</strong></p>

<p>Spaanse knoflooksoep is eigenlijk van oorsprong armeluisvoedsel. Het is gezond, goedkoop en een ideaal gerecht om restjes oud brood op te maken. Het liefst gebruik je grof gesneden stokbrood, maar eigenlijk zijn alle oude restjes brood bruikbaar.&nbsp; Maar of je nu goed of slecht in je slappe was zit, feit is dat deze Spaanse knoflooksoep gewoon enorm lekker is.</p>

<p>Zoals bij zoveel populaire Spaanse gerechten, bestaan er ook van de Spaanse knoflooksoep &#8211; sopa de ajo &#8211; vele varianten. Er zijn recepten die van generatie op generatie gebruikt worden, maar vaker is de receptuur afhankelijk van de restjes in de koelkast. Chorizo, eieren, bacon, ham… eigenlijk kan alles er in. De soep wordt in bepaalde regio&#8217;s van Spanje ook vaak met Pasen gegeten.</p>

Maar ook de keukens en gerechten waarin vlees of vis niet weg te denken lijken te zijn, komen in dit boek volop aan bod. Boerdam giet klassiekers in een eigentijds vegetarisch jasje met een knipoog naar het origineel.</p>



<p><em>Isabel Boerdam lanceerde in 2013 haar food &amp; lifestyle blog <a href="https://www.dehippevegetarier.nl" target="_blank" rel="noreferrer noopener">De Hippe Vegetariër</a>, dat inmiddels is uitgegroeid tot het grootste Nederlandstalige platform voor vegetariërs. Hier laat Isabel zien dat vegetarisch eten beslist niet saai, smakeloos of ingewikkeld is maar juist verrassend, smaakvol en heel eenvoudig. <p>Huevos a la flamenca &#8211; ook wel zigeuner eieren genoemd &#8211;  is een authentiek gerecht uit Andalusië, waar rondtrekkende zigeuners het eeuwen geleden al maakten. Lekker als warme lunch of als makkelijk diner!</p>

<p>Huevos a la flamenca worden niet alleen zigeuner eieren genoemd, maar staan ook bekend als Spaanse flamenco eieren. Ach, geef het beestje maar een naam; het belangrijkste is natuurlijk dat het hartstikke lekker is. Hoewel dit Spaanse gerecht een beetje aan een <a href="https://www.eieiei.nl/shakshuka-met-brood/">Oosterse shakshuka</a> doet denken, of aan de Mexicaanse huevos rancheros, is er één belangrijk verschil: het is officieel geen ontbijtgerecht, maar je eet het als lunch of avondeten. Als voorgerecht of gerechtje bij een brunch kan natuurlijk ook, als je de hoeveelheden naar beneden bijstelt.</p>



<h2 class="wp-block-heading">Huevos a la flamenca: kliekjeskost</h2>



<p>Zoals zoveel van dit soort gerechten is het eigenlijk kliekjeskost: ideaal om restjes groenten en aardappels in te verwerken. Dat verklaart ook meteen waarom er heel veel varianten van dit recept zijn. Je kunt dus eigenlijk naar hartelust variëren of ingrediënten weglaten als je het gerecht iets minder zwaar wil maken (de aardappel) of iets niet lust (de paprika bijvoorbeeld, hoewel wij aanraden dan wel het gerookte paprikapoeder toe te voegen). Alleen de eieren en tomaten zijn vaste kost.</p>



<h2 class="wp-block-heading">De oven doet het werk</h2>



<p>Het fijne van dit eiergerecht is dat je het makkelijk voor kunt bereiden. Je kunt het tomatenmengsel namelijk al een dag van te voren maken en dan afmaken op de dag dat je het wil eten. Dan is het nog maar een kwartiertje wachten, terwijl de oven zijn werk doet.</p>



<p>Wij vinden huevos a la flamenca het lekkerst met geroosterde paprika. Daarvoor rooster je ze even in de oven, waarna je ze ontvelt. Maar je kunt de paprika ook gewoon rauw  meebakken met de rest van de groenten natuurlijk.</p>



<h2 class="wp-block-heading">Of je laat het in de pan (zonder deksel)</h2>



<p>De traditionele variant van huevos a la flamenca wordt overigens geserveerd in eenpersoons vuurvaste schaaltjes. Wij zijn lui en zetten gewoon de hele pan in de oven. je kunt deze eieren trouwens ook zonder oven bereiden. In dat geval laat je de groenten in de pan en maak je er vier kuiltjes in waarboven je de eieren breekt. Bak op laag vuur tot de eieren gestold zijn. Doe dit zonder deksel, want mét krijg je een witte waas over je eieren. Dat doet aan de smaak niets af, maar oogt veel minder lekker.</p>

<p>De Spaanse aardappeltortilla (tortilla Española) wordt ook wel tortilla de patatas, Spaanse frittata of Spaanse omelet genoemd. En hét geheim van een goede aardappeltortilla is eigenlijk heel simpel: de eieren moeten niet helemaal door en door gaar zijn. Als je de eieren een pietsie rauw/vochtig laat in het midden, krijgt je tortilla een hele fijne &#8211; bijna custardachtige &#8211; textuur. Yum!</p>



<h2 class="wp-block-heading">De originele aardappeltortilla</h2>



<p>Hoe de aardappeltortilla ooit ontstaan is, is onduidelijk. Zeker is dat het gerecht ergens in het midden van Spanje het levenslicht zag. Gezien de basale ingrediënten kunnen we er wel vanuit gaan dat het een gerecht is dat in heel veel huishoudens gegeten werd. Je hebt voor de originele aardappeltortilla namelijk alleen eieren, aardappels en olijfolie nodig. Drie ingrediënten en je bent lekker goedkoop klaar. Hoewel de meeste mensen aan het basisrecept ook nog ui toevoegen. Wij ook, want dat geeft net dat beetje extra pit aan je tortilla. Om diezelfde reden voegen wij ook altijd twee teentjes knoflook toe.</p>



<h2 class="wp-block-heading">Aardappeltortilla: van tapa tot volledige maaltijd</h2>



<p>Zoals gezegd kun je een goede aardappeltortilla prima in kleine puntjes snijden als tapa bij de borrel. Zowel warm als koud lekker. Maar je kunt hem ook serveren bij een salade als lunch of lichte maaltijd. Sommige mensen eten zelfs aardappeltortilla op brood (of in brood als vulling, dan heet het bocadillo de tortilla). Het wordt ook als ontbijt gegeten.</p>



<h2 class="wp-block-heading">Niet per se vegetarisch</h2>



<p>Ook dit is weer zo’n lekker recept om van je restjes af te komen. Want hoewel de basistortilla dus simpel en vegetarisch is, kun je er prima restjes uit de groentela (spinazie, aubergine, champignons en zelfs boerenkool) in gooien en leent zo’n aardappeltortilla zich ook prima voor uitbreiding met spekjes of chorizo. Experimenteren mag dus, of is misschien zelfs wel een must. Wel wordt er over het algemeen voor één groente gekozen om de aardappels te vervangen.</p>



<p>Overigens kom je in Spanje tortilla’s in allerlei formaten tegen. Van elegante dunne aardappeltortilla van 3 cm tot een dikte van wel 10 cm. Wil je het jezelf makkelijk maken, dan gebruik je <a href="https://partner.bol.com/click/click?p=2&amp;t=url&amp;s=50576&amp;f=TXL&amp;url=https%3A%2F%2Fwww.bol.com%2Fnl%2Fp%2Fibili-tortillapan-omeletpan-24-cm%2F9200000058201523%2F&amp;name=Ibili%20Tortillapan%2C%20omeletpan%20-%2024%20cm" target="_blank" rel="noreferrer noopener">een tortilla-pan</a>. Dat is een dubbele pan die de warmte goed vasthoudt, zodat je aardappeltortilla gelijkmatig gaart. Bovendien draai je daarmee niet de tortilla om, wat vaak resulteert in roerei in plaats van tortilla, maar draai je de pan. Zo heb je op een makkelijke manier een tortilla die aan twee kanten mooi bruin is.&nbsp;</p>
